Ingredients

1 oz (2 tablespoons) dark rum

1 oz (2 tablespoons) amber rum

2 tablespoons fresh orange juice

1 tablespoon fresh lemon juice

1 teaspoon superfine granulated sugar

Dash of grenadine

Garnish with an orange slice

Preparation

Mix all ingredients in a shaker with 1 cup ice cubes, then strain into a glass filled with ice cubes. Makes a drink.

Blue Hawaiian

Ingredients

1 oz white rum

1 cherry

2 oz pineapple juice

1 oz Blue Curacao liqueur

1 ounce coconut cream

1 slice pineapple

Preparation

Mix rum, Blue curacao, pineapple juice and coconut cream with a cup of ice in an electric mixer at high speed. Pour the contents into a glass of whiskey. Garnish with pineapple slice and a cherry. Makes a drink.

Hawaii Cocktail

Ingredients

2 oz Gin

1 oz pineapple Juice

1 / 2 oz Triple Sec

Preparation

Mix all ingredients in a shaker with ice and strain into a cocktail glass (an old-fashioned glass). Garnish with cherry. Makes a drink.

Hawaiian Fruit Punch (this is for kids!)

Ingredients

1 oz Lemon Juice

Juice of 1 / 2 lemon

1 oz Guava connector

1 oz Pineapple Juice

1 / 2 oz. Passion Fruit Juice

Soda

Preparation

Blend with crushed ice and pour into a glass of the fireplace. Fill glasses with soda. Stir and add fruit you like. Makes a drink.

One of the oldest fortified wines and most wonderful fact is a sherry. Jerez is a corner of southwest Spain called Andalusia. Grapes grown in the white earth, chalk typical of the region known as 'Albariza'. This is a very porous soil that absorbs the short rains and allows the grapes to survive the hot, humid summers. The rain falls on average only 75 days a year.

Palamino and Pedro Ximenez grapes are the two varieties traditional grape used in Jerez. When the harvest, the grapes are dried for two weeks to concentrate the sugars before they are crushed. This gives a small amount of juice with a high sugar content. In a twist on the old method of crushing grapes by foot, the Grape Stompers of the best Sherry wore boots with nails in the soles. The wine is fermented for several months before fortification. The final Jerez mixture is produced by a system of "solera" using the rows of barrels of wine making "criaderas (smaller reserves younger wines).
